About

Nicole is a graduate of the University of Illinois at Chicago coordinated nutrition program where she obtained her Masters of Science in Human Nutrition. Previously, she worked as a clinical dietitian at Shirley Ryan AbilityLab where she provided medical nutrition therapy for patients across the lifespan, serving pediatric and adult populations. Nicole has participated in research exploring a wide range of topics including the effects of time restricted feeding on metabolic disease risk, the effects of carrageenan on glucose tolerance, and botanical dietary supplement metabolism and safety in women.
